Start by slicing the bologna in cross-hatches around the perimeter at about 3/4" to 1"
1 chub Bologna
Add rub to a mixing bowl and toss bologna chub in the dry rub. Ensure the bologna is entirely covered on all surfaces.
1 cup Dark brown sugar, 1/2 cup Paprika, 2 Tbsp. Onion powder, 1/4 cup Garlic powder
Put bologna on smoker at 225 F. Allow to smoke for 2 hours before checking.
Begin prepping your barbecue sauce after you see the exterior of the bologna is to your liking. Add 2 cups of barbecue sauce to a sauce pan and add 2 heaping tablespoons of apricot preserves. Allow the preserves to reduce over medium-low heat. Once incorporated, set the saucepan to a simmer.
