Dry Rub

  • 1 cup Dark brown sugar
  • 1/2 cup Paprika
  • 1/4 cup Garlic powder
  • 2 Tbsp. Onion powder


  • 2 cup Yes, Dear Competition Barbecue Sauce or any barbecue sauce you like
  • 2 Tbsp. Apricot Preserves


  • Start by slicing the bologna in cross-hatches around the perimeter at about 3/4" to 1"

  • Add rub to a mixing bowl and toss bologna chub in the dry rub. Ensure the bologna is entirely covered on all surfaces.
    1 cup Dark brown sugar, 1/2 cup Paprika, 2 Tbsp. Onion powder, 1/4 cup Garlic powder
  • Put bologna on smoker at 225 F. Allow to smoke for 2 hours before checking.
  • Begin prepping your barbecue sauce after you see the exterior of the bologna is to your liking. Add 2 cups of barbecue sauce to a sauce pan and add 2 heaping tablespoons of apricot preserves. Allow the preserves to reduce over medium-low heat. Once incorporated, set the saucepan to a simmer.

  • After 3 hours - or whenever you're happy with the shrinkage and/or rub caramelization - remove the bologna from the smoker.
  • In a new mixing bowl, add your glaze. Use tongs to strategically maneuver the bologna so that all surfaces are covered.
  • Place back on the smoker for 15 minutes or until the glaze has set.
  • Remove from the smoker, slice the bologna and place on some white bread and enjoy!


If you like coleslaw, consider making some and adding it to the sandwich.
