Mop sauces are really as simple as vinegar and hot sauce.
This recipe is pretty forgiving and gives that classic tangy and acidic flavor that cuts through the fattiness of pork.
If you don’t have anything listed, just omit it or substitute it with similar ingredients:
Depending on what you’re cooking you could even use a few shakes of your dry rub for that day.
Recipe Notes:
*If you don’t have garlic cloves, use 1/2 tbsp garlic powder or granulated garlic.
*If you love cider vinegar, use 1 cup OR even omit the white vinegar and just use ACV.
*Use 2-3 tbsp of lemon juice if you don’t have fresh lemon.
*If you don’t have creamed honey, use 2-3 tbsp of dark brown sugar.
Set your burner to low-medium heat.
Add your unsalted butter and allow to melt.
Add your thinly sliced yellow onion and crushed garlic cloves and allow those to break down until the onions are translucent.
Lower heat and then add the rest of your ingredients.
Whisk thoroughly ensuring the sugar is dissolved and the dry ingredients are well incorporated.
