Combine soy sauce, mirin, rice vinegar, water, sugar, ginger, and garlic in a bowl for soy glaze.
1/3 cup Low Sodium Kikkoman Soy Sauce, 1/3 cup Mirin, 2 tbsp Rice Vinegar, 1/4 cup Water, 1/2 tsp ground ginger, 1/2 tsp granulated garlic, 4 tbsp Evaporated Cane Sugar
Brown ground beef in pan over medium heat, season with salt and pepper, blot excess fat with paper towel and discard. Leave a little fat in the meat for mouthfeel.

Lower heat to medium-low and pour soy glaze over beef, simmer ~3-5 minutes. Ensure well combined with beef.
Mix cornstarch and water to make a slurry then add to beef to thicken. This will make the beef look quite moist.

Mix shredded cabbage with rice vinegar and sugar.
1/2 package Cabbage slaw, 1 tsp white sugar, 2 tsp Rice vinegar
Dice red onion.

Warm tortillas briefly.
Spread 1 tbsp of sriracha mayo on tortilla.
Add beef, top with cabbage slaw, red onions, and crispy onions.
