Homemade Doner Kebab w/ No Special Equipment
Everyone loves Doner Kebab but getting the meat right is a pain. This method uses parchment paper, your oven, and that's it.

Ingredients

80/20 ground beef
(extra fat helps later when we broil)

Vidalia onion
(pureed)

Vidalia onions
(quartered)

Sour cream or Greek yogurt
(I always use sour cream)

Any type of flatbread - I used homemade tortillas I make
▢
Lettuce like romaine OR whatever you have
▢
Pinch
cured sumac
Kebab Seasoning

For Chipotle Garlic Aioli

Instructions
Puree whole Vidalia onion and mix with ground beef, seasonings, and sour cream until paste-like.
1 whole Vidalia onion,
2 tbsp Sour cream or Greek yogurt,
3/4 tsp garlic powder,
3/4 tsp Diamond Crystal kosher salt,
1/4 tsp Cumin,
1/4 tsp Coriander,
1/2 tsp black pepper,
1/2 tsp smoked paprika
Flatten meat mixture between parchment paper sheets using rolling pin.
Roll meat into log and place on baking sheet with quartered onions.
Bake at 400F for 40 minutes.
Unroll meat and spread out, then broil 3-4 minutes until browned. If your oven cooks unevenly, rotate the pan every minute or so.
Blend aioli ingredients with immersion blender until smooth.
3 tbsp Mayo,
1-2 tsp Lemon Juice,
1/2 tsp chipotle powder,
1 tbsp water,
1 tsp garlic powder
Assemble kebab on flatbread with aioli, meat, roasted onions, and lettuce.
Optionally sprinkle with sumac.
Notes
Use any flatbread, adjust seasoning to taste.
