Homemade Doner Kebab w/ No Special Equipment

Everyone loves Doner Kebab but getting the meat right is a pain. This method uses parchment paper, your oven, and that's it.
Prep Time: 20 minutes
Cook Time: 45 minutes
Total Time: 1 hour 5 minutes

Ingredients

  • 1.5 lb 80/20 ground beef (extra fat helps later when we broil)
  • 1 whole Vidalia onion (pureed)
  • 2-3 whole Vidalia onions (quartered)
  • 2 tbsp Sour cream or Greek yogurt (I always use sour cream)
  • Any type of flatbread - I used homemade tortillas I make
  • Lettuce like romaine OR whatever you have
  • Pinch cured sumac

Kebab Seasoning

  • 3/4 tsp garlic powder
  • 3/4 tsp Diamond Crystal kosher salt
  • 1/4 tsp Cumin
  • 1/4 tsp Coriander
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika

For Chipotle Garlic Aioli

  • 3 tbsp Mayo
  • 1-2 tsp Lemon Juice
  • 1 tsp garlic powder
  • 1/2 tsp chipotle powder
  • 1 tbsp water

Instructions

  • Puree whole Vidalia onion and mix with ground beef, seasonings, and sour cream until paste-like.
1 whole Vidalia onion, 2 tbsp Sour cream or Greek yogurt, 3/4 tsp garlic powder, 3/4 tsp Diamond Crystal kosher salt, 1/4 tsp Cumin, 1/4 tsp Coriander, 1/2 tsp black pepper, 1/2 tsp smoked paprika
  • Flatten meat mixture between parchment paper sheets using rolling pin.
  • Roll meat into log and place on baking sheet with quartered onions.
  • Bake at 400F for 40 minutes.
  • Unroll meat and spread out, then broil 3-4 minutes until browned. If your oven cooks unevenly, rotate the pan every minute or so.
  • Blend aioli ingredients with immersion blender until smooth.
3 tbsp Mayo, 1-2 tsp Lemon Juice, 1/2 tsp chipotle powder, 1 tbsp water, 1 tsp garlic powder
  • Assemble kebab on flatbread with aioli, meat, roasted onions, and lettuce.
  • Optionally sprinkle with sumac.

Notes

Use any flatbread, adjust seasoning to taste.
