In a bowl, combine the following ingredients and whisk thoroughly.
1/2 Cup Mayo, 1/2 Cup Sour Cream, 1/2 tsp Black pepper, 1/2 tsp table salt, 1/4 tsp chili powder, 1/2 tsp paprika, 1 tsp garlic powder, 1 tbsp lime juice OR juice of 1 lime + zest
Grilling Corn
Shuck corn.
Get grill to 400F.
Place corn on grill.
Rotate corn every 3-5 minutes or so until all sides are browned and slightly blistered.
Once you're happy with how the corn looks (roughly 10-20 minutes), take off the grill.
Saucing and Sprinkling Cheese
Take your sauce and apply a light layer to all sides of the corn with a basting brush.
Take some of your cotija cheese and sprinkle over all sides of the corn.

When you go to serve, leave the bowl and basting brush to the side as not everyone likes their corn completely saturated with sauce. I've found that the sauce listed is good for around 4-14 ears of corn, depending on how much sauce people use.
