Steak Marinade Recipe to Use for Burritos, Quesadillas, Tacos, etc.

Ingredients

  • 2 lb Petite sirloin steak

Steak Marinade

  • 1/3 Cup Avocado oil or similar neutral cooking oil
  • 1/3 cup Soy Sauce
  • 1/4 cup red wine vinegar
  • 1 tbsp lemon juice
  • 1 tbsp lime juice
  • 1/2 tsp white pepper
  • 1 tsp cumin
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon Mustard
  • 1 tsp granulated garlic
  • 1/2 tsp black pepper

Instructions

  • In a mixing bowl, combine ingredients in the specified quantities.
    1/3 Cup Avocado oil or similar neutral cooking oil, 1/3 cup Soy Sauce, 1/4 cup red wine vinegar, 1 tbsp lemon juice, 1 tbsp lime juice, 1/2 tsp white pepper, 1 tsp cumin, 2 tbsp Worcestershire sauce, 1 tbsp Dijon Mustard, 1/2 tsp black pepper, 1 tsp granulated garlic
  • Put steak into ziplock bag and then add your mixed marinade. Massage marinade into meat, push out air, and then marinate for at least 2 hours, ideally overnight.

The Next Day or 2 Hours Later

  • Get your grill to 400F.
  • Sear steak over direct heat for 1 minute, flip and then another minute. Repeat this process for 4-5 minutes or until you're happy with the exterior of the meat.
  • Once you're happy, take the steak off to rest for 5-7 minutes, then slice thin and against the grain.
  • Then use the meat as you deem fit - I like this meat with burritos, quesadillas, in a burrito bowl, etc. Even over just rice is great with a little more soy sauce.

Notes

The leading flavor in the marinade is the Red wine vinegar - besides the oil and soy sauce, this is the only ingredient I wouldn't skimp on. 
Test from 2/25/2025: Omitted lime juice and white pepper - both were flavors that were definitely missing.
I lowered the Red Wine vinegar to 2 tbsp instead of 1/4 cup and it's less acidic which is sort of missed - but if you don't like this flavor, 2 tbsp is a safe bet.
Bumped the cumin to 1 tsp, which I prefer and updated recipe to reflect.
