If you’re a fan of beef/steak in your burritos, quesadillas, or bowls, etc. – this marinade is typically what I use.
It’s similar to what spots like Moe’s or Chipotle will use for their steak.
Cut of Beef to Use
I almost always use petite sirloin steak.
It’s tender and it’s far cheaper – like half the cost – than flank, skirt, or flap meat.
Granted, if that’s all you can find, those cuts will work too.
Steak Marinade Recipe
Combine well in a mixing bowl:
- 1/3 Cup Avocado oil or similar neutral cooking oil
- 1/3 cup Soy Sauce
- 1/4 cup red wine vinegar*
- 1 tbsp lemon juice
- 1 tbsp lime juice
- 1/2 tsp white pepper
- 1/2 tsp cumin
- 2 tbsp Worcestershire sauce
- 1 tbsp Dijon Mustard
- 1 tsp granulated garlic
- 1/2 tsp black pepper
*This is the leading flavor in this marinade, without it the steak will taste completely different.
Allow the beef to marinate for at least 2-6 hours OR overnight.
Get Your Grill to 400F and Sear Steak Over Direct Heat
Sear for 30 seconds on one side, flip and 30 seconds on the other.
Repeat this process for 2-4 minutes per side OR until your desired doneness.
Really all I look for is some char but not a ton and a visible color change or browning.
Once You’ve Seared the Steak, Allow it to Rest for 5-10 Minutes
Then slice the meat thin and against the grain into strips for burritos.
Assemble and Make Burritos
At the store buy stuff like:
- Tortillas
- Rice
- Black Beans
- Corn
- Onions (red/white)
- Bell Peppers
- Cheese
- Lettuce
- Tomato
Then assemble your burrito – steak included – toast wrap in a pan on medium heat to seal and enjoy!

Slightly salty, tangy, and umami

In a mixing bowl, combine ingredients in the specified quantities.
1/3 Cup Avocado oil or similar neutral cooking oil, 1/3 cup Soy Sauce, 1/4 cup red wine vinegar, 1 tbsp lemon juice, 1 tbsp lime juice, 1/2 tsp white pepper, 1/2 tsp cumin, 2 tbsp Worcestershire sauce, 1 tbsp Dijon Mustard, 1/2 tsp black pepper, 1 tsp granulated garlic
Put steak into ziplock bag and then add your mixed marinade. Massage marinade into meat, push out air, and then marinate for at least 2 hours, ideally overnight.
The Next Day or 2 Hours Later
Get your grill to 400F.
Sear steak over direct heat for 1 minute, flip and then another minute. Repeat this process for 4-5 minutes or until you're happy with the exterior of the meat.
Once you're happy, take the steak off to rest for 5-7 minutes, then slice thin and against the grain.
Then use the meat as you deem fit – I like this meat with burritos, quesadillas, in a burrito bowl, etc. Even over just rice is great with a little more soy sauce.
The leading flavor in the marinade is the Red wine vinegar – besides the oil and soy sauce, this is the only ingredient I wouldn’t skimp on.
