Breakfast Sausage and Stewed Tomatoes Over Rice

I grew up on this meal - it's cheap, flavorful and filling. It'll likely be added to your bi-weekly rotation because it's so simple.

Stuff You Need:

  • Jimmy Dean Regular Pork Sausage Roll (32 oz.)
  • Italian Stewed Tomatoes (4 x 14.5 oz can)*
  • Steamed Rice**

Optional “Stuff”:

  • 1 large vadalia onion, diced
  • 1/2 tbsp italian seasoning
  • salt + pepper to taste

*For the stewed tomatoes, if you can’t find ones that are seasoned, just add 1/2 tbsp of Italian Seasoning.

Often I just buy 2×28 oz. cans as they’re cheaper but 14.5oz is far more common.

**The amount of steamed rice to make is based on how many people you’re feeding – I typically do 2-3 cups of cooked rice for 4 people.

Form Sausage Patties and Brown it

Cut the patties from the roll using the guide lines on the package.

Heat a wide-bottomed pot over medium heat and brown the patties.

Personally, I like these very browned – this might look “burnt” but it’s pure flavor and not bitter/burnt.

Optional Sauteeing of Onions

Take ~ 1 tbsp of the fat/grease from the sausage and add to another skillet, heat over medium heat and sautee diced vidalia onions until very brown.

Growing up we never did this but this is my change to my Mom’s version.

If you opt not to do this, use a paper towel to remove the excess grease from the pan as it will float on top.

Before Adding Stewed Tomatoes, Cut Sausage Patties in Half or 4ths

Then add your stewed tomatoes and season with 1/4 tsp of black pepper, 1/4 tsp salt and if the stewed tomatoes were un-seasoned, add 1/2 tbsp of Italian seasoning..

Bring this mixture to a simmer.

Allow to simmer like this until the rice is finished.

Make Your Rice as per Package Instructions

Really any type of rice works – the goal of the rice is to soak up the liquid and to add bulk to the meal.

We use Carolina Long Grain White Rice in a rice cooker for ~20 minutes but I’ve used the boxed 5-minute stuff many times.

Assemble

Grab a bowl and add a layer of rice to the bottom – spreading it out.

Scoop a ladle-full of the sausage and stewed tomato mixture over the rice.

Enjoy.

  • 32 oz Jimmy Dean Regular Pork Sausage Roll
  • 4 14.5 oz can Italian Stewed Tomatoes
  • 2-3 cups Steamed Rice

Optional Stuff

  • 1 large Vadalia onion (diced)
  • 1/2 tbsp italian seasoning
  • salt + pepper to taste

Instructions

  • Brown sausage patties in wide-bottomed pot over medium heat until browned.
    32 oz Jimmy Dean Regular Pork Sausage Roll
  • Optional: Sauté diced onions in ~ 1 tbsp of sausage grease in separate skillet.
    Note, if you opt not to do this, remove the sausage patties from the skillet and then use a paper towel to remove excess grease.
    1 large Vadalia onion
  • Cut sausage patties into quarters.
  • Add stewed tomatoes to sausage pan with salt, pepper, and Italian seasoning.
    4 14.5 oz can Italian Stewed Tomatoes, 1/2 tbsp italian seasoning, salt + pepper to taste
  • Simmer tomato mixture while preparing rice.
  • Cook rice according to package instructions.
  • Layer rice in bowl and top with sausage and tomato mixture.

Notes

Any white rice works.
We use 2-3 cups cooked rice for 4 people.
This is another stewed tomatoes and sausage for ~6-7 servings.
