Take Flanken Cut Beef Ribs Out of the Package and Put Into Ziplock Bag(s) to Marinate
Make Marinade for Flanken Cut Ribs
This is for roughly 3 lbs of flanken cut beef ribs:
- 1/2 Cup Soy Sauce
- 1/4 Cup 7-up/Sprite or Water
- 1/4 Cup Mirin
- 1 tbsp Rice Wine Vinegar
- 2 Tbsp Dark Brown Sugar
- The whites from 2 green onions sliced
- 2 tbsp Gochujang
- 1/2 tbsp sesame oil
- 1/2 tbsp granulated garlic
- 1 tsp ground ginger
Combine well and then add to the ziplock bag with the ribs.
Marinate for at least 2-6 hours, ideally overnight.
The Next Day, Get Your Grill to 400F+
We’re NOT concerned with internal temperature here – we just want to develop some char on the outside of the ribs.
I prefer to flip often as the marinade has dark brown sugar and there’s sugar in the sprite – meaning if you sear for too long in one spot, it’ll burn.
Sear on one side for 30 seconds, flip, then 30 seconds on the other side.
Repeat this until you’re happy with the exterior of the meat – this will roughly be 2 minutes per side.
Take Off to Rest Until They’re Safe to Eat
Rest for 3-5 minutes or until the bones are warm to the touch.
Then enjoy!
These make for a wonderful finger food – they’re tender, the marinade compliments the fatty meat, and they’re fun to eat.
Grilled Flanken Cut Beef Ribs

- 3 lb Flanken Cut Beef Ribs
Marinade

Instructions
- Take flanken cut beef ribs out of packaging and add to a ziplock bag.
- In a mixing bowl combine marinade ingredients in the specified quantities.1/2 Cup Soy Sauce, 1/4 Cup 7-up/Sprite or Water, 1/4 Cup Mirin, 1 tbsp Rice Wine Vinegar, 2 Tbsp Dark Brown Sugar, 2 green onions (whites only, finely chopped), 2 tbsp Gochujang, 1/2 tbsp sesame oil, 1/2 tbsp granulated garlic, 1 tsp ground ginger
- Add marinade to ziplock bag with ribs. Marinate for at least 2-6 hours or overnight.
- The next day, get your grill to 400F+.
- Once at temperature, put ribs on the grill. Sear for 30 seconds on one side, flip, and repeat for another 30 seconds. Repeat this process for a total of 2 minutes on each side.
- The goal here is just to get some char on the outside. Don't be super worried about internal temperature as these will stay tender and juicy regardless.
- Once you're happy with the color, take the ribs off the grill to cool for 3-5 minutes and then enjoy!
