Stuff You Need
- ~1.5 lb 80/20 ground beef (extra fat helps later when we broil)
- 1 whole Vidalia onion, pureed
- 2-3 Vidalia onions, quartered (OR whatever veggies you like)
- ~2 tbsp Sour cream or Greek yogurt (I always use sour cream)
- Any type of flatbread – I used homemade tortillas I make
- Lettuce like romaine OR whatever you have
- Pinch of cured sumac
Kebab Seasoning
- 3/4 tsp garlic powder
- 3/4 tsp Diamond Crystal kosher salt
- 1/4 tsp Cumin
- 1/4 tsp Coriander
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
Or just use whatever Kebab seasoning you like – these are all spices I normally have on hand so this is what I normally use.
For Chipotle Garlic Aioli
- 3 tbsp Mayo
- 1-2 tsp Lemon Juice
- 1 tsp garlic powder
- 1/2 tsp chipotle powder
- 1 tbsp water
In a Bowl Combine Everything
Take a whole Vidalia onion and puree in a food processor or similar.
To a large bowl add your ground beef, the pureed onions and seasonings, and sour cream or Greek Yogurt
Mix well until everything is combined – the meat should feel paste like and wet.
Lay Out 2 Arms Length Sheets of Parchment Paper
Put the beef mixture in the center of 1 sheet and use the other sheet to help flatten out the meat.
I like to use a rolling pin here so that it’s both even and very flat and thin.
Once flattened, start rolling it up.
Put this on a baking sheet and on the same baking sheet add whatever veggies you like, I used 2 whole Vidalia onions quartered.
Set Your Oven to 400F
Bake for ~40 minutes.
After 40 minutes, unravel the meat and spread it out.
Set your oven to Broil and then return the meat to the oven; You’re broiling until the meat is browned on top.
I rotate the pan about every minute or so to ensure everything is evenly browned, this took ~3-4 minutes.
Make a Quick Aioli or Garlic Sauce
In a tall container add:
- 3 tbsp Mayo
- 1-2 tsp Lemon Juice
- 1 tsp garlic powder
- 1/2 tsp chipotle powder (optional)
- 1 tbsp water
Combine with an immersion blender until smooth and creamy.
Taste and adjust to your liking – add more garlic, more lemon juice, salt, etc.
Make Your Kebab
For this recipe I used homemade tortillas, you can find that recipe here.
Really any flatbread works though – naan, pita, tortillas etc. Whatever you have.
Add a slather of your aioli, some doner beef, your veggies you cooked, and some leaf lettuce.
I also like to sprinkle on some cured sumac but that’s also optional.

Homemade Doner Kebab w/ No Special Equipment
Ingredients

Instructions
- Puree whole Vidalia onion and mix with ground beef, seasonings, and sour cream until paste-like.1 whole Vidalia onion, 2 tbsp Sour cream or Greek yogurt, 3/4 tsp garlic powder, 3/4 tsp Diamond Crystal kosher salt, 1/4 tsp Cumin, 1/4 tsp Coriander, 1/2 tsp black pepper, 1/2 tsp smoked paprika
- Flatten meat mixture between parchment paper sheets using rolling pin.
- Roll meat into log and place on baking sheet with quartered onions.
- Bake at 400F for 40 minutes.
- Unroll meat and spread out, then broil 3-4 minutes until browned. If your oven cooks unevenly, rotate the pan every minute or so.
- Blend aioli ingredients with immersion blender until smooth.3 tbsp Mayo, 1-2 tsp Lemon Juice, 1/2 tsp chipotle powder, 1 tbsp water, 1 tsp garlic powder
- Assemble kebab on flatbread with aioli, meat, roasted onions, and lettuce.
- Optionally sprinkle with sumac.
