Cut Wings into Flats and Drums and Remove Wingetttes

If you’re not sure how to do that – read my article.

OR leave them whole.

Take Your Wings and Dredge Them in Cornstarch

For a party pack of wings (12 whole, 24 parts) I use a 1/2 cup of cornstarch.

Put this into a bowl and toss the wings in it.

Ensure all sides are completely covered – if need be, add more cornstarch, it’s cheap.

Get Your Grill to 425F and Put Wings on the Grill

Allow these to grill until the cornstarch is set on the bottom and isn’t flaking off.

This transition is obvious as the wings/cornstarch will have a brown-hue. Usually this takes about 20 minutes.

Once this happens, flip the wings and allow them to grill for another 15 minutes or so.

While the Wings Grill, Make Your Honey Chipotle Sauce

If you need a more complete recipe, here’s mine.

Rough cop a large Vidalia onion.

Set a pot to medium-low heat and add 2 tbsp of a neutral oil.

Allow onions to brown and turn translucent.

Once this happens, add to the pot:

  • 1/3 cup white vinegar
  • 1/3 cup water
  • 1 cup Ketchup
  • 1.5 tbsp molasses
  • 3 oz chipotle in adobo sauce (half of a 6 oz can)
  • 3 tbsp soy sauce
  • 1/3 cup Creamed Honey or Regular Honey
  • 1 tsp Onion Powder
  • 1 tsp garlic powder
  • 1/2 tsp black pepper

Allow this mixture to simmer for 30 minutes.

Then strain with a fine mesh sieve to remove onions and chipotles.

Then store in a mason jar.

Take the Wings Off Once the Cornstarch is Set OR an Internal Temperature of 200F

Going to 200F will make the wings:

  • Super tender and still juicy
  • Render more of the skin fat and make them crispier
  • Allow the cornstarch to get crunchy

Under Low Heat, Reheat 1 Cup of the Honey Chipotle Sauce

Then toss your wings in it and enjoy!

Since our honey chipotle sauce used a neutral oil (a fat) – we don’t need to melt butter into it to make it velvety and to help the sauce stick to the wings.

Honey Chipotle BBQ Wings

Super crispy skin, tender meat, with a homemade honey chipotle BBQ sauce.

Ingredients

  • 24 wings
  • 1/2 cup corn starch

Honey Chipotle Wing Sauce

  • 1 large vidalia onion, rough chopped
  • 1/3 cup white vinegar
  • 1/3 cup water
  • 1 cup Ketchup
  • 1.5 tbsp molasses
  • 3.5 oz chipotle in adobo sauce half of a 7 oz can
  • 3 tbsp soy sauce
  • 1/3 cup Creamed Honey or Regular Honey
  • 1 tsp Onion Powder
  • 1 tsp garlic powder
  • 1/2 tsp black pepper

Instructions

Make Honey Chipotle Sauce

  • Rough chop a large vidalia onion.
  • In a pot over medium heat, add 2 tbsp of neutral oil and cook onions until they're translucent.
  • Then add the rest of your ingredients. Allow the sauce to simmer for 30 minutes.
    1/3 cup white vinegar, 1/3 cup water, 1 cup Ketchup, 1.5 tbsp molasses, 3.5 oz chipotle in adobo sauce, 3 tbsp soy sauce, 1/3 cup Creamed Honey or Regular Honey, 1 tsp Onion Powder, 1 tsp garlic powder, 1/2 tsp black pepper
  • After 30 minutes strain the onions and chipotles.
  • Store in a mason jar or similar container.

Cut and Prepare Wings for the Grill

  • Take wings out of packaging and separate into wingettes and drumettes.
  • Take a 1/2 cup of corn starch and add to a large mixing bowl. Put wings into bowl and toss in corn starch ensuring all parts are completely covered.
    Add more corn starch as needed.

Put Wings on the Grill

  • Get your grill to 425F.
  • Once at temperature put wings on the grill – avoiding hot zones.
  • Allow to grill for 20 minutes.
    After 20 minutes, check to see if the wings are browning on the underside. If they're not completely "crispy looking" on the underside, allow to grill for 5 more minutes.
  • Once the underside is crisped, flip over to the other side and allow to grill for 15 more minutes.
  • Take the wings off the grill when they're crispy looking – the internal should be at around 190-200F.

Re-heat Sauce and then Sauce the Wings

  • Take 1 cup of your sauce and reheat.
  • Then toss wings in the sauce.
