Cut Your Cauliflower into Steaks
Take your cauliflower and remove the stem/greens.
Then take the cauliflower and cut them up into 1-2″ thick steaks.
From a single cauliflower I can pull roughly 2-3 “steaks” so buy/scale accordingly.
Make Your Mustard-Sauce
This recipe uses a homemade Mustard BBQ Sauce – this sauce features vegetable oil which really helps with the grilling process.
If you don’t want to use my sauce you could opt for:
- My Carolina Gold Sauce
- A Honey Mustard type sauce
- etc.
Whenever you have your sauce decided, simply dunk the cauliflower steaks in the sauce and coat completely.
I like to do two full dunks with each steak.
Get Your Grill Setup to 400F
I’m using my PK Grill and around a full chimney of lit charcoal.
Once your grill is up to temperature (~400F), take your sauced cauliflower steaks and lay them on the grill.
You’re grilling until the outside chars -but not entirely “burned”.
Once you’re happy with the exterior of the steaks, take off the grill and set aside.
Let the cauliflower cool for a few minutes.
You can then serve as is or cut up into small bite-sized chunks as an appetizer.
Barbeque Cauliflower Steaks
Ingredients
- 1 Head cauliflower
Dylan's Mustard BBQ Sauce
- 3/4 Cup Yellow Mustard Any Brand
- 3/4 Cup White Sugar
- 1 Tbsp Coarse Ground Black Pepper
- 1/2 Tsp Ground Cumin
- 1/2 Tbsp Granulated Garlic
- 1/3 Cup Worcestershire Sauce
- 1/4 Cup Frank’s Red Hot
- 8 Tbsp White Vinegar
- 1 Cup Vegetable Oil
- 1/2 g Xantham Gum
Instructions
- Take your head of cauliflower and remove the green stem and cut into 1-2" thick steaks. *From a single head of cauliflower I can get roughly 2-3 good sized steaks.
- Warm 2 cups of barbecue sauce over low heat. For this recipe I used my Mustard BBQ Sauce recipe. If you don't want to make my sauce, use your favorite mustard-based sauce.
- Once warmed, take your steaks and toss them in the sauce.
- Get your grill to around 400F.
- Once at 400F, place your sauced cauliflower steaks on the grill.
- Allow the steaks to grill, flipping every 10 minutes or so until you're happy with the exterior. You want there to be a noticeable char on the exterior. I grilled my steaks for 45 minutes.
- After grilling, allow to cool for 5 minutes and then enjoy!
