Smoking fish is actually one of the easier things you can do.

The keys to doing so are often as simple as: 

1. Brining overnight with salt and sugar.

2. Air drying overnight.

3. Smoking low and slow (140-175F) to prevent albumen leakage.

4. Using a wood like alder or maple for a light smoke flavor.

Doing those things will result in awesome smoked fish.
