Mexican street corn is one of easiest and cheapest things to bring to a Backyard BBQ.
The grilled corn and sauce has a creamy taste and the cotija cheese has a salty, tang.
Making the Sauce for Mexican Street Corn
Depending on how heavy you like to apply the sauce, this is enough for between 4-14 pieces of sweet corn.
I always do a light layer and then let people apply more sauce.
Whisk the Following Ingredients Together:
- 1/2 Cup Mayo
- 1/2 Cup Sour Cream
- 1/2 tsp Black pepper
- 1/2 tsp table salt
- 1/4 tsp chili powder
- 1/2 tsp paprika
- 1 tsp garlic powder
- 1 tbsp lime juice OR juice of 1 lime + zest
Grilling the Corn
Shuck corn and remove husk from the ears.
Get your grill to 400F.
Once at temperature, place shucked corn on the grill.
Rotate every 5 minutes or so until all sides of the corn are darkened and blistered.
Once they look like the below (roughly 15-20 minutes), take off the grill.
Put the corn on a plate and cover with foil to keep it hot until everything else for your BBQ is ready.
Applying the Sauce to the Corn
Apply a light layer of sauce to the corn.
Once all sides are coated, sprinkle over the top either:
- Cotija Cheese OR
- Parmesan Cheese
When you go to serve this, leave the bowl of sauce and a basting brush next to the corn, this way people can decide if they want more.

Prepare Sauce

Once you're happy with how the corn looks (roughly 10-20 minutes), take off the grill.

When you go to serve, leave the bowl and basting brush to the side as not everyone likes their corn completely saturated with sauce. I've found that the sauce listed is good for around 4-14 ears of corn, depending on how much sauce people use.
